with Vegetables Calicorico Style
This Green Lentil Curry with vegetable appears on Calico’s dinner/lunch menu quite often. Adding this hearty yummy recipe to your repertoire will change your life! I recommend eating this curry the next day because of the texture and flavour settles. However, eating it right away also makes you smile and gives your soul content. (if you like spicy curry, add fresh green chilies with vegetables)
Spices: Choose some good ones. I don’t recommend buying the ones in the bulk section at a grocery store, or buying low-cost brands. Freshness of the spices also matters a great deal, too.
Ingredients:
- Dry Green Lentils about 4 cups (soak overnight or at least 6 hours)
- 2 medium carrots
- 1 yellow onions
- 1 or 2 stalks of celery
- Madras curry powder 2 tsp
- Garam Masala 2 tsp (choose a good quality or blend your own)
- Cumin powder 1 tbsp (or add + 1 tsp if you like cumin)
- Turmeric 1/4 tsp
- Tomato can 1/2 cup (2 fresh tomatoes or tomato paste 1 tbsp)
- 4 cloves garlic
- 1 inch square ginger
- Cooking oil (in this video, I use grape seed oil)
- Salt (3 tsp in total or more if you like more flavour)
